Hi loves! Im here to share with you an amazing traditional Mexican recipe. My parents are from Acapulco, Mexico and atole is one of those authentic recipes that is a staple in our culture. Everyone is obsessed with atole de platano macho (plantain). It is a thick consistency drink which can be poured into your favorite mug or bowl. I love to eat it out a bowl with a spoon, because I love getting the smashed plantains from the bottom with every spoonful. We always make this recipe, specially during the holidays. We love to drink/eat this while we cozy up and watch movies. Here is the recipe.
2 cans of coconut milk
1 cinnamon stick
2 Piloncillos (unrefined cane sugar) or 1 cup of brown sugar
1/2 cup of masa (dough made from corn flower) or Maseca
15 1/2 cups of water
Step 1: Fill up a cooking pot halfway with water (about 15 cups of water) and add the cinnamon stick. Turn the heat to medium.
Step 2: Add the two piloncillos (brown sugar cane) or 1 cup of brown sugar and bring it to a boil over high heat. The sugar is to taste so add as little or as much as you would like the sweetness level to be. This is how sweet we like it.
Step 3: Peel and add the plantains to the pot. Let them soften for 15 to 20 minutes.
Step 4: Once the plantains are soft bring the heat down to a medium and smash them in the pot with a smasher.
Step 5: On a separate bowl add half a cup of water and dissolve the 1/2 a cup of masa or Maseca. Mix until there are no lumps. When it is dissolved add it to the pot and mix.
Step 6: Only after you have added the masa or Maseca, add the two cans of coconut milk to the pot and stir. It is important that you do not add the coconut milk before the masa/maseca.
Step 7: Serve hot into a bowl or a mug and enjoy!
